A new breakfast restaurant is coming to the East Side, brought to you by the owners of 312 Pizza Company! Maple and Eggs is set to open this fall at 941 West Eastland Ave., next door to Holland House Bar and Refuge.
Staci Bockman, her husband and her family are partnering with property owner Cees Brinkman in this newest venture. “I think it’s honestly just the right place at the right time,” Bockman said. “It was something we were approached to do. … We were presented with it and felt strongly about it, and we had a great idea for a breakfast restaurant.” Bockman described Maple and Eggs as a “very traditional breakfast” restaurant that will use quality ingredients, such as antibiotic- and hormone-free meats and fresh-squeezed juices.
The majority of the menu will focus on two ingredients: maple syrup and eggs. Bockman said the pancake batter will have swirls of maple syrup, and the restaurant will offer a variety of skillets with hash browns, eggs, veggies and meat. In addition, Maple and Eggs will have a full bar program with breakfast cocktails.
Bockman hopes Maple and Eggs will complement the burgeoning restaurant and bar scene at West Eastland and Mcferrin avenues, which also includes Holland House, the Pharmacy Burger Parlor & Beer Garden and Mas Tacos.
Maple and Eggs will have about 80 indoor seats and an additional 60 on an outdoor patio.
